Chicken Chow Mein

Chinese stir fried noodles

Delicious Chinese stir fried noodle recipe that's quick to make. Chow Mein basically means stir fried noodles.  This version fries the noodle a little, bringing out the nutty flavour while adding a little crispiness.  When buying Chinese egg noodles, look for the Hong Kong style or the ones with Chow mein on the packet.

It's a fairly simple recipe, in fact I can prepare it and cook it faster, than calling for Chinese food delivery.  Having a good wok with a powerful jet does help, but you can certainly do it in a frying pan at home.  The wok gives you that wok hei, some also call it breath of the dragon or wok breath. That's what gives your food that smoky or charred aroma flavour you get in real Asian cooking. You don't get the same result in a pan, but the pan is much healthier, so it's a good trade off. I have my wok set up outside then bring the food inside, it drives the neighbours crazy with that beautiful outdoor cooking smell.

I used broccolini for this recipe, I like the green colours mixed with the red bell pepper, but you can use other vegetables such as Chinese cabbage, bok choi etc.


Ingredients

  • 8oz - 250g Chicken thighs
  • 12oz - 350g Egg noodles un-steamed Hong Kong Style
  • ½ Red bell pepper
  • 4 broccolinis (small bunch)
  • 1 brown onion
  • 3.5oz - 100g Bean sprouts
  • 5-6 Spring onions
  • 4 tbsp vegetable oil
  • White pepper
  • Marinade
  • 1 tbsp Light soy sauce
  • 1 tsp Sesame oil
  • 1 tbsp honey
  • White pepper
  • The Sauce
  • 1 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 2 tbsp Dark Soy
  • 1 tsp Sesame oil
  • 1 garlic clove minced (optional)
  • 3 tbsp water

Steps

  • Step 1

    Slice the chicken thighs into thin strips and add to a mixing bowl with soy sauce, sesame oil, honey and white pepper. Mix well, leave to marinate 30 minutes.

  • Step 2

    Boil a pot of water for your noodles, cook in boiling water under one minute then strain and immediately refresh in a large bowl or container of cold water.  Once cold, strain, separate, pat dry in clean kitchen towels, set aside.

  • Step 3

    Slice the vegetables into strips, red bell pepper, spring onions or green onions (chop the white parts finely), brown onion, broccolini, Aim for 1½ inch lengths.  Set aside.

  • Step 4

    Chop the garlic very finely, add to a small bowl.  In the same bowl, add and mix all the sauce ingredients, set aside.

  • Step 5

    Using the same wok or pan throughout, add 1 tablespoon vegetable oil over high heat. Once oil is hot, place the marinated chicken pieces.  Stir fry over high heat until brown and nicely cooked.

  • Step 6

    Give the wok or pan a clean with water and a wipe, add 1 tablespoon vegetable oil over high heat. Once hot place the noodles and fry noodles in very hot wok until they start to colour and go a little crispy. Set aside.

  • Step 7

    For the vegetables, start with the red pepper, cook 15-30 seconds between each veg (depending on heat) then add the sliced onion, broccolini and spring/green onion.  Add the cooked chicken, bean sprouts and fried noodles.  Mix well and stir fry over high heat, for a few seconds.  Crank up the heat, add the sauce, toss and mix over high heat a few times, serve immediately.
